My creation of eggplant with cheeses

Recipe Ingredients for Charly's Baked Eggplant

1 eggplant, sliced
1 cup ricotta cheese
2 ounces mozzarella
14 1/2 ounces diced tomatoes
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon basil
3 tablespoons parmesan cheese

Recipe Directions for Charly's Baked Eggplant

  1. Bake eggplant slices in olive oil, at 350 for about an hour.

  2. Spray or oil baking dish. Layer eggplant, ricotta, eggplant, mozzarella, eggplant. Pour tomatoes over top. Sprinkle Parmesan cheese over top and bake at 350 for about 40 minutes.
