Delicious breakfast burrito to start off a nice weekend morning.

Recipe Ingredients for Charles' Egg & Potato Breakfast Burritos

6 whole wheat tortillas
6 eggs
3 slices cheddar cheese
1 potato
2 tsp cajun seasoning
2 1/2 tbsp canola oil

Recipe Directions for Charles' Egg & Potato Breakfast Burritos

  1. Dice potato into 1/2 inch cubes

  2. In non-stick pan, cook potatoes in canola oil (or other oil if you prefer) on medium heat, stirring occasionally

  3. After 5 minutes, add cajun seasoning and stir

  4. Scramble eggs in a bowl

  5. When the largest potato chunks have fully cooked, add scrambled eggs into pan.

  6. Stir until eggs are fully cooked and remove from heat

  7. Place egg and potato mixture onto tortilla with cheese and microwave to melt cheese.

  8. Add salsa, roll up tortilla and enjoy!
