Recipe Ingredients for Chari's Enchiladas

1 cup salsa
4 cups chopped skinless chicken breasts
10 corn tortillas
1 1/2 cup cheddar cheese
1/2 chopped onion
4 oz chopped green chilies

Recipe Directions for Chari's Enchiladas

  1. Season chicken breasts to taste and grill or you can just boil them until no longer pink.

  2. Cut cream cheese brick into cubes.

  3. Cut cooked chicken into bite sized pieces and stir in onions and chilies. Warm tortillas in microwave until softened.

  4. Add a heaping tablespoon of chicken mix to tortilla and roll up. Place seam side down in a greased 9-13 pan.

  5. After all of chicken mix is used, sprinkles with cheese and salsa together in a separate bowl. Cover with cheese and bake until cheese is melted and golden brown.
