Recipe Ingredients for Chargrilled Vegetable and Tofu Salad

2 Red peppers
2 zucchini
3 baby eggplants
2 1/2 tbsp of olive oil
375 g of firm tofu
1 cup finely shredded basil
2 tbsp red wine vinegar
1 tablespoon mustard
1 salt and pepper

Recipe Directions for Chargrilled Vegetable and Tofu Salad

  1. Preheat chargrill and flat plate on med-high. Place peppers, zucchini and eggplant in a large bowl. Add 2 teaspoons of oil and toss.

  2. Put the peppers, skin side down, and cook for 3 - 4 minutes. Place in a bowl and cover with a towl. Cook the zucchini and eggplant for 2 - 3 minutes and place in a separate bowl. Brush tofu with 1 tablespoon of oil and place on chargrill cooking for 3-4 minutes on each side. Cut into strips and add veggies.

  3. Once the peppers are cool peel away the skin, and cut into thin strips. Mix up the oil, vinegar and mustard and season well.
