Swiss Chard and Potato Spring Soup

Recipe Ingredients for Chard & Potato soup

56 oz Chard, Swiss
28 oz Chicken 33% Less Sodium Broth Rtsb
2 serving Certified Organic Vegetable Broth
14 oz Water
28 oz Potatoes, Boiled
1 avocado, NS as to Florida or California Avocados
3 medium Squash, Summer, Zucchini, Includes Skin
1 medium (2-1/2" dia) Onions
1 cup, pieces or slices Mushrooms
2 tbsp Extra Virgin Olive Oil

Recipe Directions for Chard & Potato soup

  1. Saute Onion and Mushroom in oil, add the broth and water sal and pepper bring to boil and add the potato - cook for 10-15 mins until potato is cooked. Puree the mixture.

  2. Add the Chard and zucchini boil for 5 mins reduce the heat to simmer puree and add the avacado

  3. Serve hot or cold
