Colombian Breakfast stale bread soup.

Recipe Ingredients for Changua

2 cups water
2 cups milk
4 eggs
4 teaspoons fresh cilantro, chopped
2 scallions, chopped
1 salt
4 slices toasted bread, cut into cubes

Recipe Directions for Changua

  1. Chop cilantro and scallions.

  2. Cut the bread into cubes. I do use stale bread instead of toasting the bread. Artisan bread is particularly good.

  3. Mix water, milk and salt in a sauce pan and set over medium high fire, bring to a boil and reduce fire.

  4. Add the bread cubes and let them soak, then add the eggs. Try not to break the eggs, the idea is to poach them in the liquid.

  5. Adjust taste. Chicken bouillon is a good way to spice up the broth. Alternatively you can use chicken broth instead of water.

  6. Wait for the egg yolks to settle, serve immediately.
