this is an all- purpose usili base, just add cooked vegetable and u have the vegetable usili.

Recipe Ingredients for Chana dal usili

1 1/2 cups chickpeas, mature seeds
2 pepper, green, hot
1 salt to taste
1/2 tsp oil
1/2 tsp mustard
1/2 tsp black beans, dehusked
1/4 tsp baking soda

Recipe Directions for Chana dal usili

  1. soak chickpeas for an hour.

  2. rinse, drain, grind coarsely adding the chillies and salt, adding water as needed.

  3. add the sodium bicarbonate and mix; the batter will froth.

  4. pour the batter in idli moulds and steam for 10 minutes.

  5. cool, remove the steamed dumplings carefully.

  6. crumble the dumplings.

  7. heat oil in a wok, add the mustard. when mustard splutters, add the black bean and saute for two minutes.

  8. when the beans start turning golden brown, add the crumbled dumplings, saute for a couple of minutes.

  9. remove, cool and store in fridge.

  10. add an ounce of this to a couple of oz of any cooked vegetable, say snap beans.
