Delicious filling vegetarian meal. Great for cold winter nights.

Recipe Ingredients for chana dal

0.5 cup Chana Dal
2 cup (1" cubes) Pumpkin
8 Potato small (1-3/4" to 2-1/2" dia) Potato, Flesh And Skin
3 small Onions
3 clove Garlic
4 medium Carrots
0.25 head, medium (5-6" dia) Cauliflower
1 stalk Broccoli

Recipe Directions for chana dal

  1. Chop onion and crush garlic. Set aside.

  2. Chop all vegies up into 3cm pieces.

  3. Place in a large pot (excluding onion and garlic) with a tablespoon of good vegetable stock powder.

  4. Fill with water until vegies are almost covered.

  5. Place chana dal on top.

  6. Do not stir until the pot is boiling well.

  7. Cook until chana dal is tender.

  8. Cook onion and garlic slowly in a heavy, lightly oiled pan until transparent.

  9. Add 1.5 - 2 teaspoons of garam masala and cook for a minute longer.

  10. Stir into dal pot.

  11. Serve on rice (I prefer brown rice)
