The vegetarian version of one of Mom's recipes

Recipe Ingredients for Chalupa 'meat'

1/2 tbsp olive oil
1 cup onion, diced
4 cloves garlic, minced
330 g (1 pkg) Yves ground round
1 can tomato paste

Recipe Directions for Chalupa 'meat'

  1. Saute the onion and garlic in the oil, until the onions are translucent (5-10 min). At this point, I usually add chili powder and cumin to taste, about 1-2 tsp of each.

  2. Add the ground round, breaking it up. Heat through. (2-5 min if refrigerated, ~10 min if frozen)

  3. Add tomato paste, plus 1 can water. Simmer for 5 minutes.

  4. Serve on tortillas w/refried beans, lettuce, tomato and cheese.

  5. 1 serving is ~1/3 cup
