This challah requires some time, but it is delicious. If you are a serious home baker, try it!!

Recipe Ingredients for Challah

18 oz unbleached bread flour
1 oz granulated sugar
1/4 oz salt
3/20 oz instant yeast
1 oz vegetable oil
3 3/10 oz eggs
1 1/4 oz egg yolks
9 oz water
1 tsp vanilla extract

Recipe Directions for Challah

  1. Stur tigether the flour, sugar, salt and yeast in a mixing bowl. In a separate bowl, whisk together the oil, vanilla, eggs and yolks, and 3/4 cups plus 2 Tbsp water. Pour the egg mixture into the flour mixture. Mix with spoon until ingredients form a ball. Add the remaining water, if needed.

  2. Sprinkle flour on the counter, transfer the dough and knead for about 10min,sprinkling flour if needed to make a soft, supple, but not sticky dough.

  3. Lightly oil a bowl. Transfer the dough to the bowl, cover with a plastic wrap. Ferment for 1 hour at room temperature.

  4. Remove the dough form the bowl and knead for 2 min to degas. Re-form a ball, return it to the bowl, cover with the plastic wrap and ferment for an additional hour. It should be at least 1 1/2 times its original size.

  5. Remove the dough from the bowl and divide it into 3 equal pieces. Cover them with a towel, and let them rest on the counter for 10 min.

  6. Roll out the pieces into strands, each the same length and braid them. Line a sheet pan with baking parchment paper and transfer the loaf to the pan. Brush the loaf with an egg wash (using 2 beaten egg whites). Cover losely with a plastic wrap and keep it at room temperature for 60 to 75 min, until the dough has grown 1 1/2 times its original size.
