Recipe Ingredients for Chaiyaphum chicken

1 lb. chicken, cubed
1 med. white onion, chopped
1 green bell pepper, chopped
2 large carrots, julienned
2 cloves garlic, minced
1 tbsp canola oil
2/3 cup oyster sauce
1 tbsp sugar
1 tbsp distilled vinegar
2 tsp dried red pepper

Recipe Directions for Chaiyaphum chicken

Heat oil in wok. Add garlic and crushed red pepper until they are bubbling. Throw in the cubed chicken meat. Fry over med./high heat until cooked thoroughly. Add vegetables and sugar, vinegar, and oyster sauce. Add water if you want more sauce. Cook until vegetables are at the desired tenderness. I also add a splash of fish and soy sauces too but many don't like that. Serve immediately over steamed rice.
