Recipe Ingredients for Chai Spiced Lentil Cookies

1 cup, packed Sugars, Brown
16 tbsp Original Natural Buttery Spread
0.75 cup Lentils, Mature Seeds
0.062 cup Quinoa
0.13 cup Amaranth
0.5 cup Rice Flour, White
1/4 cup GF Sorghum Flour
0.13 cup Brown Rice Flour
1 cup dry Quick Quaker Oats
0.3 tbsp Xanthan Gum
1 large Egg, Whole
16 Tablespoon Pumpkin Seeds
0.5 cup, slivered Almonds
1/2 cup (not packed) Raisins, Seedless
0.25 cup, halves Apricots, Dried, Sulfured, Uncooked
1 serving candied ginger root
1 tsp Cinnamon, Ground
0.5 tsp Ginger, Ground
1 tsp, ground Cardamom
0.5 tsp Cloves, Ground

Recipe Directions for Chai Spiced Lentil Cookies

  1. Cream the cooked lentils, cooked amaranth and cooked quinoa with brown sugar and Earth Balance.

  2. add egg, vanilla, almond extract and anise extract.

  3. in separate bowl whisk together flours and spices with baking soda.

  4. add flour mixture and oats to lentil mixture and mix well.

  5. stir in ginger, chopped apricots, raisins, pumkin seads and almonds.

  6. drop by tablespoons onto parchment lined baking sheets and bake 13-18 minutes or until golden. Cool on parchment.

  7. Store in airtight container.
