Healthy and flavorful chicken chili. To add more heat, use jalapeno pinto beans or add a seeded (or whole) jalapeno.

Recipe Ingredients for Cha Cha Chicken Chili

1 yellow onion, chopped
1/2 squash, chayote
1 tbsp canola oil
2 tbsp chili powder
1 tbsp cumin
1/2 tsp pepper, white
1/2 lb chicken thighs
15 oz beans, pinto
1 can chicken broth
1/2 tsp salt, MOrton light
3 roma tomatoes, chopped

Recipe Directions for Cha Cha Chicken Chili

  1. Saute onion, squash and garlic in oil. When onions are soft, add spices and chicken thighs.

  2. Cook together until chicken is no longer pink.

  3. Remove chicken and shred. Return to pot.

  4. Add beans and broth and cook until heated through.

  5. Add tomatoes.

  6. Simmer until hot.

  7. Add salt if needed.

  8. Serve.
