A delicious, healthy version of Mexican ceviche.

Recipe Ingredients for Ceviche, shrimp

64 oz shrimp, cut in small pieces
3 cups lemon juice
2 1/2 diced tomatoes
2 1/2 chopped onions
25 grams diced cilantro
1/2 tablespoon salt

Recipe Directions for Ceviche, shrimp

Combine all ingredients together in large bowl. Mix well. You can always cut the recipe down, if this sounds like too much. My family loves it, and always wants leftovers!
