Healthy breakfast muffins, any high fiber, low sugar cereal can be used

Recipe Ingredients for Cereal Muffins

4 cups All Bran cereal
1 1/2 cups boiling water
1 cup flax seed meal
1/2 cup flax seeds
1 1/2 cups stone ground whole wheat flour
1/2 cup brown sugar
1 cup splenda
4 tsp baking soda
1/2 cup canola oil
3/4 cup egg substitute
2 1/2 cups low fat buttermilk
1 cup frozen blueberries
1 cup chopped walnuts

Recipe Directions for Cereal Muffins

Mix boiling water with dry cereal and set aside to cool. Combine dry ingredients in large bowl, combine wet ingredients in medium bowl then add to dry ingredients. Add cooled cereal, mix well. Makes 3 dozen muffins
