This delicious low calorie celery soup recipe is easy to make, full of natural flavor and filling too!

Recipe Ingredients for Celery Soup

12 stalks celery
1 finely chopped onion
2 small potatoes
3 cloves fresh garlic
1 tsp thyme
2 1/2 cups chicken broth
1 1/4 cups 2% milk

Recipe Directions for Celery Soup

  1. Put into a large saucepan the celery and onion, minced garlic and diced potato. Stir together and heat on high until sizzling. Reduce the heat and cook, covered, for around 10 minutes until the celery and onions have softened.

  2. Add the thyme and stock, season with sea salt and freshly ground pepper then bring back to the boil and simmer (partially covered) for 15 minutes.

  3. Either use a stick blender or a blender to blend the soup until smooth.

  4. Stir in the milk and simmer for another 5 minutes.

  5. Check the seasoning and serve sprinkled with the chopped parsley.
