A winter soup based on beef stock

Recipe Ingredients for Celery Soup from Abruzzo

3 cups celery
5 Tbsn olive oil
1 onion, sliced
1/3 cup ham, chopped (Should be pancetta....)
1 1/2 Tbspn tomato paste
10 cups beef stock
1 cup rice

Recipe Directions for Celery Soup from Abruzzo

  1. Wash a bunch of celery carefully, discarding coarse leaves and seriously damaged stalks. Separate stalks and dice.

  2. Heat stock in separate pot while making sofrito, as follows:

  3. Heat 5 quart pot over low heat, add oil, and fry onion and pork until onion is soft and light golden. Add celery and tomato paste and continue to cook for about 5 minutes.

  4. Gradually add near-boiling stock while stirring; cover and simmer for 20 minutes.

  5. Bring back to gentle boil and add rice, stirring; simmer until rice is tender but not overcooked (about 15 minutes).
