These savory pancakes are delicious, and not such a gut bomb as potato or regular flour pancakes! They taste a little like they're made out of thanksgiving stuffing, so I suggest serving them with berry or apple sauce!

Recipe Ingredients for Celery Root Pancakes

2 cups celeriac
3 eggs
1/8 cup parmesan
2 tbs. shallot
1 tablespoon olive oil

Recipe Directions for Celery Root Pancakes

  1. Cube and oven-roast the celery root (about an hour at 375 with a light drizzle of olive oil), or use left-overs from dinner. It's ok to mix in potatoes, if you have some on hand-- they increase calories but add a little body.

  2. Put it all in a food processor until it's smooth, and the eggs have gotten a little frothy.

  3. Portion it out to desired pancake size on a medium heat, oiled griddle, flipping once as the sides brown.

  4. Enjoy!
