Made these today and they were good (from the Healthy Hedonist cookbook). It makes ten, so I did 10 for the serving size, but you'll probably want to eat 2 or 3.

Recipe Ingredients for Celery Root-apple Latkes with Sage

1 lb celery root, peeled and grated
1/2 lb Granny Smith apple, (one large) peeled and grated
1 tbsp sage, fresh minced
1/2 cup red onion
1 tsp salt
1 egg
1/4 tsp black pepper
1/2 cup unbleached white flour

Recipe Directions for Celery Root-apple Latkes with Sage

Saute onions and cool. Mix grated apple and celery root with other ingredients and basically cook them like they're pancakes. They freeze well.
