Recipe Ingredients for Celery and Onion Pasta

4 Celery Stalks, cut on bias 1/2" pieces
1/2 Yellow Onion
1/2 lb. Linguine, Whole Wheat
1 T. Extra Virgin Olive Oil
1/4 c. Chicken broth or bouillion
1/4 t. Red Pepper Flakes
2 T. Parsley, chopped
2 t. Lemon Zest
1 t. Salt
1/2 t. Pepper

Recipe Directions for Celery and Onion Pasta

Wash and slice celery on the bias into about 1/2" pieces. Save and chop the leaf portions for garnish. Chop onion. Put pot of water on stove to boil for the pasta. In a large skillet, cook celery and onion in olive oil over medium heat, until translucent. Add pasta to boiling, salted water. Add chicken broth, red pepper flakes, parsley, lemon zest to celery and onion mixture. Cook over medium heat, and reduce slightly. Once pasta has finished cooking, drain and add to celery and onion mixture while on the stove. Cook together for a few minutes in order to marry the flavors. Serve topped with celery leaves that have been chopped.
