Recipe Ingredients for Celery and Cilantro Relish

2 cups celery, finely diced
3 tablespoons olive oil
2 tablespoons cilantro, minced fresh
2 teaspoons vinegar, sherry wine

Recipe Directions for Celery and Cilantro Relish

Combine all ingredients in medium bowl. Season relish with salt and pepper. Let stand at least 30 minutes. (Can be made 6 hours ahead. Cover and chill.)
