Christmas/Thanksgiving stuffing recipe taken from Cordon Bleu Course Book 12.

Recipe Ingredients for Celery, Apricot and Walnut Stuffing

1 1/2 cups of celery, thinly sliced (or one small head)
4 oz dried apricots (soaked overnight)
4 oz chopped walnuts (and/or pecans)
1 1/2 oz butter
2 chopped onions
1 1/2 cups of fresh breadcrumbs
1 tbsp parsley
1 tsp salt (or to taste)
1 tsp pepper (or to taste)

Recipe Directions for Celery, Apricot and Walnut Stuffing

  1. Drain the apricots and cut into small pieces. Melt the butter in a pan, add onions, cover and cook until soft. Then add the celery, apricots and nuts. Cook about 4 minutes over brisk heat, stirring continuously, then turn into an ovenproof dish.

  2. When cool, stir in bread crumbs and parsley. Season to taste.

  3. Bake in oven at (approximately) 350 until browned.

  4. (*Note - Breadcrumbs can be made from a plain loaf of bread, crusts removed, and left out for a day or two. Whiz them in the cuisinart until it makes fine crumbs. One whole loaf makes enough crumbs for 2-3 recipes)
