Great creamy soup w/o milk, cream or butter.

Recipe Ingredients for Celeriac & Potato Soup

2 tsp olive oil
1/2 c leeks
1 c celeriac
2 c potatoes
6 c vegetable broth

Recipe Directions for Celeriac & Potato Soup

Put the olive oil in the pan and cook chopped leeks, white part only. About 4-5 min. Add the celeriac (celery root) and potatoes and saute until slightly softened, about 5 min. Add the broth/stock and simmer. Cover partially and cook until the vegetables are very soft, about 20 min. Remove fm heat - using handheld blender, puree the soup until smooth. Season w/salt & pepper to taste.
