A thick, warming and healthy winter soup.

Recipe Ingredients for Celeriac and Apple Soup

3 cups celeriac
1 cooking apple
1 apple
1 onion
1/2 leek
2 pints chicken stock

Recipe Directions for Celeriac and Apple Soup

  1. Heat the teaspoon of oil in a big pan

  2. Roughly chop the onion and leek and then cook in oil slowly until soft

  3. After peeling the apples chop them and the celeriac into chunks (you will want to cut off the outer bits of the celeriac) then add them to the pan

  4. Cook on a slow heat until the apple and celeriac have softened a little it (around ten mins)

  5. Add the stock and simmer slowly for at least 15 minutes until everything is soft

  6. Blend with a blender to a texture that you like and then serve and enjoy
