The orange zest gives this a bit of a zing but you could substitute it for some chili flakes for a change. Serves 4-5

Recipe Ingredients for Celariac & Fennel Soup

400 grams Celeriac
1 bulb Fennel, Bulb
100 grams Shallots
2 tbsp Vegetable Oil, Canola
1 serving Vegetable Stock
500 ml water

Recipe Directions for Celariac & Fennel Soup

  1. Heat the oil in a large pan, add the shallots and sweat gently for a few minutes.

  2. Add the fennel and celeriac, stir well and cover with a lid and leave to sweat gently for 10 minutes.

  3. Add the orange zest and seasoning along with water to cover veg and stock cube.

  4. Cover and simmer for 15 minutes.

  5. Blend until smooth then pour into serving bowls and serve with a optional dollop of crème fraiche.
