This is a very filling soup with few ingredients. Its easy to make and is kinda like a gumbo but with no rue. Not as high in sodium as it says i used everything i could salt free but it couldn't find it in the system. You can freeze it in smaller portions for easy meals.

Recipe Ingredients for Cecilia's Italian Chicken Soup

96 oz Swanson chicken broth, 33% less sodium
4 cups of water
16 oz of baby carrots
12 medium Potatoes
1 stalk of celery
28 oz smoked sausage
26 2/5 oz Chicken breast (6 in Package)

Recipe Directions for Cecilia's Italian Chicken Soup

  1. Cut up and wash ALL ingredients first.

  2. Cut baby carrots in half.

  3. Cut potatoes in half long ways and then in 1/4 inch slices.

  4. Cut celery to an 1/8 inch.

  5. (Adjust to preference)

  6. Pour both boxes of chicken broth in a large pot. (Might need to use two if you dont have a tall pot.)

  7. Add sausage, and cube chicken or slice to preference. (You can slightly cook the chicken if u want it to be seasoned for a better flavor, but it is not necessary, it will cook on its own.)

  8. Put 1/3 of potatoes in with the rest of the ingredients and cook about 45 minutes on medium high heat until they fall apart. Then add the rest of your potatoes. Reduce heat to a simmer or about 3 or 4 on the dial.

  9. Add water and seasonings to taste, then stir and cover.(I used 1 tsp Grill Mates Salt free Montreal Chicken Seasoning, 1 tsp Pampered Chef Southwestern seasoning mix, 1 tbs Lemon pepper, 1 tbs pepper)

  10. In about 2 or 3 hours it will be done.
