CE shrimp salad with avocado dressing

Recipe Ingredients for CE Shrimp Salad

25 large shrimp, cooked
2 1/2 tbsp lemon juice, divided
1 tbsp. garlic powder
1 tsp. black pepper
1/2 tsp. oregano
1/2 tsp. parsley
1/2 tsp. crushed red pepper flakes
1/4 tsp. kosher salt
2 tbsp. avocado
1/2 cup red onions, diced
1/2 cup red pepper, diced

Recipe Directions for CE Shrimp Salad

  1. Preheat broiler to 400.

  2. Finely chop shrimp.

  3. Cover with 1 1/2 tbsp. lemon juice.

  4. In separate bowl, combine all seasonings.

  5. Pour over shrimp and shake until evenly distributed.

  6. Place shrimp on foil lined cookie sheet, evenly dispersed.

  7. Broil for about 10-12 minutes.

  8. Once cooled, return to bowl.

  9. In a separate bowl, mash avocado.

  10. Add remaining 1 tbsp. lemon juice andmix until creamy

  11. Add onions and peppers , mixing until combined
