Recipe Ingredients for CCCC(P): Chickpea Chocolate Chip Cookie Pie

2 cup Beans, White, Mature Seeds, Canned
1 cup dry Old Fashioned Quaker Oats
0.25 cup Organics Applesauce
2 tbsp Extra Virgin Coconut Oil
0.5 tsp Baking Soda
0.25 tsp Salt, Table
2 tsp Baking Powder
6 oz SPLENDA Brown Sugar Blend

Recipe Directions for CCCC(P): Chickpea Chocolate Chip Cookie Pie

  1. Ingredients:

  2. 2 cans white beans or garbanzos (drained and rinsed)

  3. 1 cup quick oats

  4. 1/4 cup unsweetened applesauce

  5. 3 tbsp coconut oil

  6. 1/2 tsp baking soda

  7. 2 tsp baking powder

  8. 1/4 tsp salt

  9. 1 and 1/4 cups brown sugar

  10. 1 cup dark chocolate chips (carob/cacao chips would be a healthier alternative)

  11. Directions:

  12. Preheat the oven to 350 degrees.

  13. Blend everything (except the chocolate chips) very well in a food processor (blender will work too)

  14. Pour batter into a large bowl and mix in the chocolate chips.

  15. Pour the batter into a non-stick/well-greased circle pie pan (I used a 10in diameter pan)

  16. Stick your finger in the batter and taste it (it?s 100% vegan which means 100% safe to eat). Its DELICIOUS!

  17. Bake for ~30- minutes. Remove from oven and allow it to cool for ~15 minutes.

  18. Serving Ideas:

  19. For Dessert: Serve it warm with a scoop of vanilla ice cream on the side

  20. For Breakfast: Enjoy it in the morning (it?s delicious warm AND cold) served it with fresh fruit or frozen fruit(I topped mine with frozen fruit microwaved in the oven to make a natural syrup)

  21. With Greek yogurt: Crumble some of the cookie on top of greek yogurt and enjoy!
