3 eggs
500 g. frozen spinach, thawed
3/4 cup tapioca flour (i.e. Bob's Red Mill)
1 pinch of grated nutmeg

Recipe Directions for CCarb-SPINACH: Pancakes - Spinach pancakes

  1. Beat eggs

  2. Mix in flour into a smooth paste

  3. Add freshly grated nutmeg (or powder)

  4. Increasingly add and mix in thawed spinach

  5. Stove top bake/heat in oiled pan, until the eggs in the pancakes show golden / light browned color.

  6. Eat with favorite topping
