Recipe Ingredients for CB Zucchini, Sausage and Feta Casserole

300 g rotini, hodgson mill veggie
184 g pork sausage, extra lean
5 c zucchini, sliced
2 c red onion, chopped
1/2 tspn salt
1/2 tspn pepper
3 cloves garlic
200 g reduced fat feta cheese
1 c stock, chicken
4 tspn flour
145 g montery jack cheese

Recipe Directions for CB Zucchini, Sausage and Feta Casserole

  1. Preheat oven to 400 F. Cook pasta as directed.

  2. Remove sausage and cook in skillet, crumbling as cooking. Remove from pan, Add zuchiini, onions, salt, pepper and garlic. Combine and broth in separate dish stirring with whisk. Add broth, cook 1 minute. Add zucchini mixture to pasta, sausage and feta cheese in large bowl and mix. Spoon into baking dish and top with shredded cheese. Bake for 20 min.
