Lamb with eggplant, chickpeas, tomatoes, served over couscous

Recipe Ingredients for CB Moroccan lamb w eggplant, served on couscous

324 g Lamb, Leg, Sirloin Half
15 oz can diced tomatoes, drained
15 oz can chickpeas, drained
1 yellow bell pepper
1 large red onion
2 stock cubes, vegetable
1 large eggplant, chopped
1 tspn cumin
1 tspn cinnamon
1 tspn yellow mustard
1/2 tspn garlic salt
1/2 tspn allspice
300 g large whole wheat couscous
2 c water

Recipe Directions for CB Moroccan lamb w eggplant, served on couscous

Broil eggplant to brown on both sides then chop into 1" cubes. Cook onions until translucent. Rub spices into meat then saute with onions. Add eggplant, chickpeas, tomatoes, bell pepper and cook for 1.25 hours. Drain juices and serve over couscous with pita bread.
