Recipe Ingredients for Cazuela de Garbanzos y Bacalao

3 oz cod
1/2 cup Chickpeas, canned
1 cup spinach, chopped
1 small onion, diced
1 garlic clove, crushed
2 tablespoons extra virgin olive oil
1 teaspoon saffron, diluted in 2 ounces of water

Recipe Directions for Cazuela de Garbanzos y Bacalao

  1. Use a cazuela if you have one, if not a skillet will work just as well. Place oil in pan, and stir fry the onions and the garlic for 10 minutes.

  2. Break the cod apart and add it to the pan. Cook for 3 minutes.

  3. Add the spinach, the chickpeas, and the diluted saffron.

  4. Cook an additional 10 minutes over very low heat.

  5. Serve and enjoy!
