Recipe Ingredients for Cayenne candy (Sore throat lozenges)

2 cups brown sugar
1/4 cup molasses
1/2 cup butter
2 tbsp water
2 tbsp vinegar
1/2 tsp cayenne pepper, McCormick brand

Recipe Directions for Cayenne candy (Sore throat lozenges)

  1. In a heavy pan deep enough to allow for foaming, stir together all ingredients except for the pepper (and butter?) over low heat until sugar is dissolved. Boil gently, stirring frequently until the hard crack stage when a spoonful of candy drizzled into cold water separates into hard, brittle threads (300 F). Add cayenne pepper (and butter?) just before reaching hard crack stage. Drop candy from teaspoon onto buttered slab or foil to form patties. Makes about 1 pound.

  2. Note: I haven't made candy of any sort in a while, but I believe the butter gets added at the last minute, which is different than what the recipe said.
