Based on a recipe in Cooking Light, but with reduced spinach, and added pine nuts and sun dried tomatoes. I also changed the pasta to whole grain pasta. This makes 4 dinner size servings (2 cups each), or 8 side servings (1 cup each). The nutrition shown is for the full dinner size.

Recipe Ingredients for Cavatappi with Spinach, Beans & Asiago Cheese

3 tablespoons olive oil
2 garlic cloves, crushed (don't skimp)
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons sundried tomatoes, chopped
6 cups spinach leaves, coarsely chopped
15 1/2 ounces cannellini beans, rinsed and drained
2 tablespoons pine nuts, toasted
6 ounces dry whole grain cavatappi, cooked (2 cups cooked)
2 ounces Asiago cheese, shredded (don't skimp)
1 Cracked black pepper (optional)

Recipe Directions for Cavatappi with Spinach, Beans & Asiago Cheese

Wisk together the first 4 ingredients in large bowl. Add chopped tomatoes, and allow to sit for a few minutes. Add spinach, cannellini beans, and pine nuts. Toss well. Top with hot pasta (this allows the spinach to wilt slightly. Once cooled, add shredded cheese. Serve topped with fresh cracked black pepper, if desired.
