Recipe Ingredients for Cauliflower Vichyssoise Soup

4 tablespoons butter
6 leeks
3 heads cauliflower
12 cups chicken stock
1/2 cup whole milk
1/2 cup heavy cream

Recipe Directions for Cauliflower Vichyssoise Soup

  1. 1) Melt butter in large soup kettle

  2. 2) Thinly slice leeks. Saute in butter. Cover and cook over low heat 30 minutes until meltingly soft.

  3. 3) Chop cauliflower into coarse pieces

  4. 4) Drop cauliflower into the pot.

  5. 5) Add soup stock.

  6. 6) simmer until tender. Then allow to cool

  7. 7) Process in batches in food processor or blender until smooth.

  8. 8) Stir in milk and cream (or 1 cup half and half). Refrigerate overnight (necessary for soup to develop proper consistency)

  9. 9) Serve cold with snipped chives, or warm up and top with crouptons and crumbled parmesan.
