Cauliflower with a mix of spices from India and Thailand.

Recipe Ingredients for Cauliflower, Spiced

32 ounces cauliflower (or 4 cups)
1/2 onion, sliced thinly
8 mushrooms, sliced
1 T balsamic vinegar
1 tsp coconut oil, organic
5 ounces light coconut milk
2 tbsp raisins (or dried currents)
1/2 tsp sea salt
1/4 tsp pepper
1/2 tsp curry
1/2 tsp turmeric
1/2 tsp coriander
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp fennel seeds
1/16 tsp hot pepper flakes (optional)

Recipe Directions for Cauliflower, Spiced

  1. Cut the cauliflower head into small sections

  2. Steam until slightly tender. Best to under cook a little.

  3. Saute the onion in the coconut oil until slightly brown. (Starting to caramelize.) Use a large enough pan to eventually hold all the ingredients.

  4. Add sliced mushrooms and continue to saute for 3-5 minutes.

  5. Add balsamic vinegar and saute until liquid is absorbed by onions and mushrooms.

  6. Add the coconut milk and raisins to the sauteed onions and mushrooms, and then add all the spices.

  7. Cook the coconut milk mixture over medium heat for about 3 minutes until the spices are incorporated in the liquid.

  8. Add the cauliflower and stir until all liquid covers the cauliflower.

  9. Cover and simmer for 5 minutes.
