Recipe Ingredients for Cauliflower Soup

4 tbsp Extra Virgin Olive Oil
1 large Sweet Onion, diced
1 potato+2-1/2"+dia,+sphere White Potato
1 large carrot, diced
1 Leek, white parts only, diced
1 head Cauliflower, cut into florets
2 cups Low-Sodium Chicken Broth
5 cups water
1/4 tsp Salt
1 tsp Black Pepper
1 tsp White Pepper
1/2 tsp Garlic Powder
1/2 cup Whole Milk

Recipe Directions for Cauliflower Soup

  1. In a large soup pot, make a roux with butter, oil and flour on medium-high heat.

  2. Reduce heat to medium and add onion, celery, leek and cauliflower, reserving cup florets of cauliflower for later. Sweat until all vegetables are soft.

  3. Add broth and enough water to thoroughly cover. Add spices to taste. Allow to simmer 30-45 minutes, stirring regularly.

  4. Remove from heat, allowing to cool for 15-20 minutes. Puree until chunky, being careful not to over blend.

  5. Return to medium heat and add remaining ingredients, including reserved florets. Heat thoroughly 10-15 minutes, stirring constantly
