Creamy, low cal, low fat, and delicious Cauliflower soup

Recipe Ingredients for Cauliflower soup

1 head cauliflower
3/4 cup skim milk
2 cups chicken broth
1 leek
2 cloves garlic
1 1/2 tbs butter

Recipe Directions for Cauliflower soup

Steam a full head of cauliflower. Add half of the head to a blender, reserving the other half and dice into chunks. Finely chop the white part of a leek and 2 cloves of garlic. Sautee in 1.5 tbs butter. Reserve half of the leek mixture, and add half to the blender with the cauliflower. Add 2 cups of chicken broth and 3/4 cup milk to blender. Blend until smooth. Add blended mix to a pot, and add in reserved leek and cauliflower along with chopped up reserved cauliflower. Stir and heat through, adding salt and pepper to taste.
