A simple healthy soup. It is prefect for ending a day with a light but filling meal. Feel free to play around with the amounts so you can get the perfect soup for you. If you'd like to make it heartier serve it with bread or homemade croutons and top with shredded cheese. On it's own, it is very tasty, healthy and simple to make

Recipe Ingredients for Cauliflower Soup

1 head, medium (5-6" dia) Cauliflower
720 grams Organic Vegetable Broth
2 cup, chopped Carrots
1 cup, diced Celery
1 cup, chopped Onions
2 clove Garlic
1 tbsp Parsley
1 tablespoon Rosemary
1 cup Spinach
2 medium raw Potato
1 tsp Thyme, Fresh

Recipe Directions for Cauliflower Soup

  1. Cut all vegetables and herbs and combine them in an oven safe dish

  2. Add the broth to vegetables. You want enough to just cover the vegetables

  3. Cover the dish and bake on 180 to 200C until the vegetables are very tender (usually an hour, depends on power of oven)

  4. Place vegetables in pot and blend with a hand blender until pureed.

  5. This is where you can customize the taste of the soup depending on your taste, adding more broth if you prefer a thinner soup, or whole milk (or cream for some) you prefer a thicker soup.

  6. Serve with grated cheese and homemade croutons
