Cauliflower, Roast Garlic and Parsley Soup

Recipe Ingredients for Cauliflower Soup

8 pieces Garlic Cloves
25 grams Butter
1 medium (2-1/2" dia) Onions
1 medium raw Leeks
1 stalk, medium (7-1/2" - 8" long) Celery
1 medium (2-1/4" to 2-1/4" dia.) Potatoes, Boiled
15 flowerets Cauliflower
300 grams Vegetable Stock

Recipe Directions for Cauliflower Soup

  1. Heat oven to Gas 3/160 and roast garlic for 25 mins until really soft.

  2. Heat butter in a large saucepan, add onion, leek, celery and potato and cook gently for 10 mins until softened.

  3. Add cauliflower, stock, seasoning and simmer for 20 mins until tender.

  4. Remove garlic from skins and add to soup. Puree until smooth. Adjust seasoning to taste and gently reheat.

  5. Stir in cream and parsley and serve with crusty bread.
