Makes 4 servings



broth-based soup - use whatever vegetable you have around. No meat. In this recipe I used canned beans, rinsed.

Recipe Ingredients for cauliflower soup

3.5 cup Beans, Great Northern, Mature Seeds
2 tbsp Extra Virgin Olive Oil
237 grams Mushrooms
148 grams Onions
3 clove Garlic
1 stalk, large (11"-12" long) Celery
1 head, small (4" dia) Cauliflower
4 cup Fat Free Vegetable Broth

Recipe Directions for cauliflower soup

  1. Saute mushrooms in EVOO until lightly browned

  2. Add onions, garlic, celery and cook until onions become translucent

  3. Break cauliflower head into flowerets and add to pot

  4. Add 1 box vegetable broth (4 cups to the pot and cook until cauliflower is tender. I used Trader Joe's vegetable broth and the broth selected from the food bank here was WAY higher (x4) in sodium than what I used in the recipe.
