Cauliflower Soup Recipe

I've always wanted to make this! I don't have a blender, so it turns out a bit chunkier than most people's.

Recipe Ingredients for Cauliflower soup

1 head cauliflower
1 leek
3 tbsp chives
5 dashes salt
1/2 tbsp ground pepper
2 cups vegetable broth
3 cups 1% milk
1 tbsp olive oil

Recipe Directions for Cauliflower soup

  1. Cut the leek in thin slices.

  2. Soften it in the heated olive oil in the pan.

  3. Before it browns, pour in the veggetable broth.

  4. Chop the cauliflower in large chunks and add it to the pan along with the milk.

  5. Season with salt and pepper and bring to a boil.

  6. Boil until the cauliflower can be mashed with your spoon.

  7. Mash the cauliflower to the desired consistancy.

  8. Serve with chive sprinkled on top.
