Cauliflower Soup Recipe

Soup for low calorie, low fat, low carb eating

Recipe Ingredients for Cauliflower Soup

1 tsp olive oil
1/2 cup chopped green onion
2 cloves chopped or minced garlic (I use more)
4 cups cauliflower, chopped into small pieces
2 cups sliced mushrooms
2 cups fresh arugula
4 cups low sodium chicken broth
3 cups water
1 tsp salt (optional)
1/2 tsp pepper
1/2 tsp Tabasco or other hot sauce, to taste

Recipe Directions for Cauliflower Soup

  1. Spray pot with Pam or olive oil

  2. saute green onions, garlic and mushrooms for 2 min until soft

  3. add cauliflower, chicken broth and water.

  4. Simmer for approx. 20 min or until veggies are soft

  5. remove 1 cup of veggies( no liquid)

  6. puree the rest in batches or with a hand blender until smooth.

  7. add veggies back and season with salt, pepper and hot sauce.

  8. add arugula and heat until wilted.

  9. I divide the soup into 7 portions and add 2 handfuls or arugula when I reheat for a complete meal.
