Cauliflower Soup Recipe

A delicious, easy way to get your veggies! It does take some time to cook, but it's a lot of time you can be doing other things!

Recipe Ingredients for Cauliflower Soup

3 heads cauliflower
3 carrots
1 onion
2 celery stalks
2 cloves garlic, minced
2 T butter
2 quarts chicken stock
2 cups cream
1 T parsley
1 t salt
1 t pepper

Recipe Directions for Cauliflower Soup

  1. Cut up veggies and roast at 350 degrees for about 1/2 hour OR you can just start with raw veggies, but I believe roasting gives it more flavor.

  2. Melt butter in large stock pot and add onion. Cook until onions are softened.

  3. Add garlic, salt, pepper, parsley and celery and cook for a few minutes.

  4. Add carrots and cauliflower. Cook for about 15 minutes or until veggies are softened (if using roasted, this will only be a few minutes).

  5. Add stock and cook about 15 minutes more.

  6. Remove from heat and add cream. Simmer until thickened.

  7. I like to blend it in batches in the blender or food processor, but it isn't necessary. It's all about how you want it.

  8. I like to use Ham stock that I make myself from a used ham bone, I think it imparts a lot more flavor. Homemade chicken stock is also tastier than store-bought, especially if you're only buying chicken broth. Sometimes, when there's enough healthy, good-for-you gelatin in the stock, the soup will set up solid when it's refrigerated!
