This is a light soup. Fat can be reduced if using a light cheese.

Recipe Ingredients for Cauliflower soup

2 cups cauliflower
1 liter chicken broth
80 grams laughing cow cheese
1/2 onion
1 leek

Recipe Directions for Cauliflower soup

Spray a casserole with Pam. Caramelize the onion and the leek, until soft. Steam the cauliflower for 7 minutes. Then blend the onions, leek, and steamed cauliflower with the broth and the cheese until smooth.Return to the casserole and bring to a boil. Then simmer for 15 minutes. Season with salt and pepper.
