Simple tasty cream soup, without the cream! Substitute vegetable broth for a vegetarian version.

Recipe Ingredients for Cauliflower Soup

1 head cauliflower, large, chopped
1 large leek, chopped
2 stalk celery, chopped
1 tsp Becel
1 cup low sodium chicken broth
5 cups water
1 tsp garlic powder
1/4 tsp black pepper

Recipe Directions for Cauliflower Soup

Melt margarine and saute chopped leek with spices until soft. Add celery and chicken broth and saute another minute. Add cauliflower and water, cover and simmer for at least 1 hour. Remove from heat and puree. Adjust seasoning to taste.
