This smooth and soothing soup is surprisingly scrumptious and super easy to make. Plus it's incredibly healthy.

Recipe Ingredients for Cauliflower Soup-Lighter Version

1 Cooking spray, extra virgin olive oil spray
3/4 large white onion, chopped
2 tsp. garlic, minced
1/2 cup celery, finely minced
4 cups fat free chicken broth
2 cups water
1 tsp. salt
1 tsp. pepper
1 tsp. thyme, dried
1/2 tsp. red pepper flakes
1/2 tsp. nutmeg
3/4 head of cauliflower, chopped
1 tsp. parsley, dried

Recipe Directions for Cauliflower Soup-Lighter Version

  1. Coat a medium soup pot with cooking spray and sauté onions, garlic, and celery until tender.

  2. Add the chicken broth, water, and seasonings (except parsley) and bring to a boil.

  3. Add the cauliflower, return to boil, cover, lower the heat just a bit but keep it at a rolling boil.

  4. When the cauliflower breaks apart easily when you press it with a spoon, take the soup off the heat.

  5. Place soup in blender (or use hand blender) to blend the soup to a smooth consistency.

  6. Return soup to pot, add the parsley, and stir. Serve very warm.

  7. For a thicker soup omit the water.
