Recipe I found online. You can use lean ground beef and fat free shredded cheddar and skip the butter; however, I found that a single serving as it kept me surprisingly satisfied and full.

Recipe Ingredients for Cauliflower Shepard's Pie

1 lb ground beef
1 tsp cayenne pepper
4 tbsp butter
1/2 onion
2 cups broccoli
2 cups carrot
3 eggs
4 ounces tomato sauce
3/4 cup shredded cheddar cheese
1 1/2 lb cauliflower
2 tbsp garlic

Recipe Directions for Cauliflower Shepard's Pie

  1. Brown ground beef in a pan with onion, garlic and cayenne pepper.

  2. Add tomato sauce.

  3. Place 1/2 of mixture in bottom of casserole dish.

  4. Add vegetables as next layers, then the rest of beef mixture.

  5. Whisk 3 eggs and pour on top.

  6. Spread cheese over all.

  7. Microwave cauliflower for 10 minutes in a small amount of water.

  8. Puree with 4 tbsp butter and 1/2 tsp salt.

  9. Pour on top of casserole.

  10. Bake 30 minutes at 400 degree or until golden brown.
