Adapted from a potato salad recipe, but this uses lower calorie cauliflower instead. Calorie count is even lower if light mayonnaise used. Great for potlucks!

Recipe Ingredients for Cauliflower Salad

3 eggs, hardboiled and grated
4 pounds cauliflower, cut in 1-inch chunks
1/2 red onion, chopped
1 tablespoon parsley, chopped
1/3 cup pimiento
1 cup celery, chopped
2 1/2 tablespoons pickle relish
2 1/2 tablespoons mustard (yellow mustard, generally)
1 1/3 cup mayonnaise
1 teaspoon Tabasco sauce
1/3 cup mustard, Creole
2 tablespoons cider vinegar
1/2 tablespoon white pepper
1 teaspoon salt

Recipe Directions for Cauliflower Salad

  1. Hardboil eggs and cool.

  2. Steam diced cauliflower about 15 minutes or until done (soft when you spear them with a fork).

  3. Meanwhile, prepare and mix other ingredients.

  4. Drain all water from cooked cauliflower and mix thoroughly with other ingredients while still hot.

  5. Refrigerate uncovered in a shallow dish to cool, then serve. Makes 3 quarts.
