Mostly raw tabouli - uses baby spinach instead of parsley

Recipe Ingredients for cauliflower-quinoa tabouli

1 cup Cauliflower
0.75 cup Quinoa
2 carrot (7-1/2") Carrots
0.5 lemon yields Lemon Juice
2 cups Baby Spinach
1 tbsp Extra Virgin Olive Oil
1 tsp Garlic Powder
0.5 small Onions
2 tomato Tomatoes, Red, Ripe

Recipe Directions for cauliflower-quinoa tabouli

  1. Cook quinoa and let cool

  2. Chop tops off carrots - conserve greens

  3. Run carrots, onion and cauliflower through food processor until chopped small

  4. Coursely chop baby spinach and carrot greans

  5. Cut tomatoes into small pieces

  6. Mix all ingredients together and serve

  7. Optional:

  8. Use 1 bunch of parsley instead of spinach for a mroe traditional tabouil

  9. Add cucumbers

  10. Use 1 clove garlic instead of powder
